It is a staple of Indian, Burmese, and middle eastern cuisine. Today, it is used in soups, salads, hummus, main dishes, and aquafaba for vegan merinques.
Garbanzo is a versatile crop that can be grown as a vegetable, sprout, microgreen, or nitrogen-fixing cover crop. Garbanzo prefers cooler weather and can be sown in early spring. Thin to about 6 to 12 inches apart. No staking is needed as the short, bushy plants will spread and support one another.
