An heirloom, dwarf variety of brussels sprouts developed in 1941, Catskill creates high yields of large, 2-inch, round sprouts that are deep green in color. Sprouts are intensely flavored and equally good fresh or frozen. To encourage the intense flavor, allow the sprouts to be hit with a frost.
These compact plants have sturdy stems and mature to 24 to 30 inches tall. Seeds can be sown either indoors or outdoors. In northern Zones, sow seeds outdoors after the threat of frost has passed. In southern Zones, brussels sprouts make good fall crops. Avoid planting when temperatures rise above 75 degrees to prevent bolting.
Brussels sprouts are excellent steamed, boiled, roasted or sauteed. Blanch before freezing to help preserve the deep green color.
